The Best Whole Wheat Pasta


I have started doing "couponing" so I signed up on all sorts of websites for free samples. My first free sample was of this Barilla Plus Pasta (I got one free and 5 buy one get one free coupons). I have tried whole wheat pasta for years, but I have never liked it very much . . . this one is GOOD! I don't even notice that I am eating whole wheat pasta. It has not just grains, but it is made with lentils, chickpeas, flaxseed, barley, spelt, and oats! It has 4 grams of fiber per serving and omega-3 fatty acids (I am guessing that is from the flax seed). Keep in mind that eating white pasta is just like eating white bread . . . low fiber, quickly digests and peaks your insulin, AND they have to add back some nutrients because it is only part of the whole grain.

Tomatoes

My kids don't usually eat fresh tomatoes, but I don't know of too many kids that don't love spaghetti sauce! One very easy way to increase vegetable intake among the whole family is by using twice the amount of spaghetti sauce that you usually do. I do this by using one jar store bought sauce and adding to it. I will saute whatever veggies I have in the house in a little olive oil (zucchini, mushrooms, bell peppers, garlic, onions, matchstick carrots . . .) and then add the jar of sauce, and then add a big can of tomatoes, but I usually put it in the blender first. I will add leftover chicken stock, fresh basil, fresh parsley . . . I do not each meat with our spaghetti, but if I have salami, or ham of some kind, I will add that too.
Not eating meat with your spaghetti is a great way to stay clear of red meat (I eat red meat, but only about once a week). If you want to start small, then just use half the amount of meat that your family used to eat with it. It also helps if you throw some kidney beans in with your green salad, or add some cheese onto your garlic toast (leave the butter off if you do this).
I really like Ragu cuz my family likes the taste, and it doesn't have any "bad" ingredients. You can often find it on sale for as low as $1.00 too.

My kids also LOVE tomato soup. Our favorite is Pacific Natural Foods Organic roasted red pepper and tomato soup.
My six year old ate 2 full bowls for lunch yesterday! We can find it at Costco in the winter and Smith's all year long. I think that Campbell's tomato soup has HFCS in it, but I have not checked on this in about a year, so if you have some in your cupboard, leave a comment with the answer.

The other thing that my 2 oldest kids like is salsa. Salsa is so good for you, and very low calorie (10 calories per serving). Encourage your kids to have a little bit on their eggs, breakfast burrito, and Mexican food.

  • Eating tomato sauce is really good for you too. All the nutrients are condensed since the water is usually boiled out. (you do lose the vit. C)

Cauliflower


I was talking to a mom at a wedding reception, and she was telling me about how she doesn't know how to cook vegetables (except corn, carrots and celery). This was enough motivation to get me off my butt and blog again!

Cauliflower is often on sale during the winter. My kids love cauliflower because, 1. it isn't green 2. it takes on any flavor you give it 3. it has a soft texture when cooked.
Moms love it because it is really good for you! 1. It only has 14 calories per 1/2 cup 2. it has 1.5 grams of fiber 3. It has lots of anti-cancer properties (like broccoli).

Here are 2 of my kids favorite way to eat broccoli (the 3rd way I don't really have a recipe for, but it is Indian Style with lots of curry!)

Cauliflower Soup

For those of you that don't know, I don't really like to follow recipes. I don't do the bouquet garni. Just add ground pepper, 1/2 teaspoon tarragon and a bay leaf and then puree it all up. :)


Cauliflower with Cheese Sauce

Cook cauliflower (boil or steam bite size pieces)

To make cheese sauce

Put about 1 Tablespoon butter in a sauce pan on med high heat. Melt. Add about 2 Tablespoons flour and cook for a minute with the butter. Add about 1 cup milk and whisk. Bring to a boil. Add about 3 cups shredded cheddar cheese, 1 teaspoon dry mustard, and a sprinkle of cayenne pepper (and salt and pepper).

Once when Dallin was about 4, I convinced him that it was mac and cheese and he loved it! He Hee!

The Impact On Children Who Parents Are Alcoholics Or Drug Addicts / Educational Video PSA. Children in families experiencing alcohol or drug abuse need attention, guidance and support. They may be growing up in homes in which the problems are either denied or covered up. These children need to have their experiences validated. They also need safe, reliable adults in whom to confide and who will support them, reassure them, and provide them with appropriate help for their age. They need to have fun and just be kids. Families with alcohol and drug problems usually have high levels of stress and confusion. High stress family environments are a risk factor for early and dangerous substance use, as well as mental and physical health problems. It is important to talk honestly with children about what is happening in the family and to help them express their concerns and feelings. Children need to trust the adults in their lives and to believe that they will support them. Children living with alcohol or drug abuse in the family can benefit from participating in educational support groups in their school student assistance programs. Those age 11 and older can join Alateen groups, which meet in community settings and provide healthy connections with others coping with similar issues. Being associated with the activities of a faith community can also help. Dependence on alcohol and drugs is our most serious national public health problem. It is prevalent among rich and poor, in all regions of the country, and all ethnic and social groups. Millions of Americans misuse or are dependent on alcohol or drugs. Most of them have families who suffer the consequences, often serious, of living with this illness. If there is alcohol or drug dependence in your family, remember you are not alone. Most individuals who abuse alcohol or drugs have jobs and are productive members of society creating a false hope in the family that "it's not that bad." The problem is that addiction tends to worsen over time, hurting both the addicted person and all the family members. It is especially damaging to young children and adolescents. People with this illness really may believe that they drink normally or that "everyone" takes drugs. These false beliefs are called denial; this denial is a part of the illness. Alcoholism and other drug addiction have genetic and environmental causes. Both have serious consequences for children who live in homes where parents are involved. More than 28 million Americans are children of alcoholics; nearly 11 million are under the age of 18. This figure is magnified by the countless number of others who are affected by parents who are impaired by other psychoactive drugs. Alcoholism and other drug addiction tend to run in families. Children of addicted parents are more at risk for alcoholism and other drug abuse than are other children. Children of addicted parents are the highest risk group of children to become alcohol and drug abusers due to both genetic and family environment factors. Biological children of alcohol dependent parents who have been adopted continue to have an increased risk (2-9 fold) of developing alcoholism. Recent studies suggest a strong genetic component, particularly for early onset of alcoholism in males. Sons of alcoholic fathers are at fourfold risk compared with the male offspring of non-alcoholic fathers. Use of substances by parents and their adolescent children is strongly correlated; generally, if parents take drugs, sooner or later their children will also. Adolescents who use drugs are more likely to have one or more parents who also use drugs. The influence of parental attitudes on a child's drug taking behaviors may be as important as actual drug abuse by the parents. On October 10th, we lost our beloved three year old son, Sebastian Ferrero. For the rest of our lives, we will thank God that we enjoyed Sebastian fully, while he was on loan to us and he lived an intense life filled with love and joy. It was almost as if we knew that he was going to last for such a short time on this earth. Although only three years old, Sebastian spoke three languages (English, Italian and Spanish) and was attending pre-kindergarten. He was very healthy and always extremely happy. This tragedy has taught us that we need to live like him, genuinely and intensely, because we are here just in transit. Apart from teaching us this life lesson, Sebastian also saved the lives of others that were waiting for a transplant. We are going to fight for his legacy not to stop there and to insure that what happened to our child does not ever happen to any other child. We trust that there are many willing to help us in this cause. Sebastian died as a result of a medication overdose that could and should have been prevented. He was not in the hospital for surgery or for treatment; Sebastian was there for a scheduled routine endocrinology test. This tragedy occurred in the Shands Health Care System in Gainesville, Florida, a medical institution considered by many to be the No. 1 medical training and healthcare facility in the southeastern United States.Shands announced on October 25th the steps they are taking to prevent similar cases and we have been assured that they will follow through with their pledge. We also believe that they have conducted their investigation in an ethical and thorough manner and we appreciate their honesty and expressions of sincere condolences. However, there is much more to be done. Our adopted hometown, Gainesville, Florida needs and deserves to have a state of the art free-standing Children's Hospital so that many children can come here to be treated by leading pediatric experts in the world, with the highest levels of safety, efficiency and healthcare. We also want to establish a Parents' Advocacy Group to work with the administrators, physicians, nurses, and other health care professionals at Shands to insure that every child and every parent is treated with compassion, courtesy, and dignity. There is absolutely nothing that will compensate us for this loss and we will suffer it forever; however, we are profoundly grateful for the numerous gestures of support from our family, friends, neighbors, families at Sebastian's school and the community in general.www.sebastianferrero.org
